OUR STORY

Ramon Gonzales, owner and operator of Fat Noodle Ramen House, first became interested in ramen thanks to his mom. She was watching a show on Food Network that featured Ivan Ramen and the two of them decided to start their own ramen business.

Prior to this, Gonzales had worked as a baker in various downtown Tucson hotspots. He and his mother also ran another dessert-focused food truck venture before starting Fat Noodle.

Gonzales spent months researching the ramen-making process and also studied at the Los Angeles branch of the Yamato School of Ramen to build his skills. After perfecting the recipes, Fat Noodle officially began as a food truck in 2014. The brick-and-mortar ramen restaurant opened in 2018.

Our ramen is nothing like the packets you can get at the store. It’s fresh, flavorful, and made from scratch.

We cook our chicken and pork broth for eight to ten hours. This allows the complex flavors to fully develop. As for our mushroom broth, we simmer this for three to four hours. As for our noodles, we spend hours each day kneading, shaping, flattening, and rolling the dough. The end result of this process is a perfect bowl of ramen that you are sure to enjoy.

Beyond our ramen, the other dishes on our menu are also housemade. Each is carefully crafted, from our enticing Fat Snacks to our delicious desserts.
